Part 3: Chef’s Knife Handle

In this comprehensive class, students will take their forged chef knives to the next level by learning the art of mounting bolsters and handles. Under Allen Rozon's expert guidance, participants will transform their blades into fully functional, aesthetically pleasing culinary tools using premium materials provided by the instructor.

What to Expect:

  • Material Selection: Allen will present a variety of premium handle and bolster materials, explaining the properties, benefits, and aesthetic qualities of each. Students will learn how to choose materials that complement their blade and suit their personal style.

  • Preparation Techniques: Participants will learn how to properly prepare both the knife tang and the chosen handle materials for mounting. This includes techniques for cleaning, shaping, and creating proper fit between components.

  • Bolster Mounting: For those incorporating bolsters, Allen will demonstrate techniques for shaping, fitting, and securely attaching bolsters to the blade. Students will learn how bolsters contribute to both aesthetics and functionality.

  • Handle Shaping: Using both hand tools and power tools, students will learn to rough shape their handle materials. Allen will guide participants through the process of creating ergonomic and visually appealing handle designs.

  • Final Shaping and Finishing: Students will refine their handle shapes, learning techniques for smoothing, contouring, and adding any decorative elements. Allen will share his expertise on achieving a professional-quality finish.

  • Handle Mounting: The class will cover various methods for securely attaching handles, including the use of epoxies and pins. Students will learn how to ensure a strong, long-lasting bond between the blade and handle.

  • Final Fit and Finish: Allen will demonstrate final fit and finish techniques, including any necessary adjustments, polishing, and protective coatings. For any steps that cannot be completed during class time, Allen will provide detailed instructions for students to finish their projects at home.

By the end of this class, students will have transformed their forged chef knives into fully realized, professional-quality tools. They will gain a comprehensive understanding of handle design, material selection, and mounting techniques, enabling them to apply these skills to future projects. For those who need additional time, Allen's detailed instructions will ensure they can confidently complete their knives at home, achieving the same high-quality results.

Class runs 2 days, from 9am-5pm each day, with a 1h lunch. All materials, safety equipment, coffee and tea will be provided. Lunch is available in town / an indoor lunch area with a microwave and fridge is provided on site if you bring your own food. Please wear closed-toe shoes and long pants.

Prerequisites: none.

NOTE: Students do not have to take “Part 1” or “Part 2” in order to enroll in this class, as the knife does not need to have been made during those classes.
